Emmental Cheese Making

Emmentaler AOP — Emmentaler Käserei

The making of Emmental AOP — the original holed Swiss hard cheese whose name has become generic worldwide for holed cheese but whose authentic AOP version is made exclusively in the Emmental valley and surrounding areas of Canton Berne. Emmental's characteristic large round holes (Augen — eyes) are produced by Propionibacterium shermanii bacteria during a warm-room fermentation phase after the initial cold pressing. The Käser reads the correct hole formation through a systematic circumferential knock-tap resonance assessment identical in principle to the Allgäuer Emmentaler (CRAFT-1195) but calibrated to the larger 75–120kg Emmental wheel format and the more precise hole-size specification of the AOP.

Geographic Center
Emmental valley, Canton Berne — the Emmentaler Schaukäserei Affoltern; the approximately 130 active Emmental AOP fromageries
Community / Ethnic Group
Bernisch / Emmentalisch
Estimated Origin
13th century (Emmental cheese documented from the 13th century; AOP Emmentaler)
Cultural Function
Emmental is the most globally 'known' Swiss cheese — the word 'Emmental' (or its English corruption 'Emmenthaler') has become a universal synonym for holed cheese even though the genuine article represents a very small percentage of the holed cheese produced worldwide; this genericization is both the tradition's greatest success (global recognition) and its greatest challenge (AOP protection insufficient to prevent unlimited imitation outside Switzerland)
Primary Materials
Raw whole milk from Emmental-zone farms (AOP requires unpasteurized milk; the Emmental valley pasture produces milk with specific mineral character from the limestone-rich geology); copper vat (same AOP requirement as Gruyère); Propionibacterium shermanii (the specific bacteria for hole formation, distinct from the Allgäuer Emmentaler culture CRAFT-1195)
Primary Tools
Copper vat; lyre for curd cutting; the knuckle (for the 10-second circumferential knock-resonance hole-formation assessment)
Process Overview
Same as Gruyère (CRAFT-1268) with larger grain cut; warm-room phase with twice-daily knock-resonance assessment; aging; quality inspection
Traditional Applications
Hard table cheese (primary from the 13th century)
Contemporary Applications
International cheese market; Swiss gastronomy; cooking ingredient
Notable Practitioners
Approximately 130 AOP Emmentaler fromagers; the Emmentaler Schaukäserei demonstration team
