Espárrago de Navarra — Procesado Artesanal
The harvesting and hand-peeling of white asparagus (Asparagus officinalis var. altilis) in Navarre — the most labor-intensive artisan food processing tradition in the Spain archive. Navarrese white asparagus (IGP since 1987) is grown under soil mounds to prevent greening by light, harvested blind by feel underground, and immediately hand-peeled within hours of harvest. The hand-peeling (mondado a mano) removes the outer fibrous skin in a single continuous spiral peel that maintains the asparagus structure — a skill that machines cannot replicate for premium-grade asparagus.
Risk level: Vulnerable · Not listed; IGP Espárrago de Navarra 1987
