Málaga Raisin Production

Pasa de Málaga

The production of Málaga raisins from Moscatel de Alejandría grapes using the traditional sun-drying method (tendido al sol) on esparto grass mats (paseros) — a technique requiring precise management of the drying environment over 10–20 days. The DOP Pasa de Málaga is the only raisin with protected designation in Europe, distinguished by its Moscatel variety, its specific mountain terroir (Axarquía and Montes de Málaga), and the traditional sun-drying on sloped south-facing platforms (haciendas paseras). The raisin master reads the correct drying progression by a combination of visual color assessment and the sound the raisin makes when pressed.
