Idiazábal Cheese Making

Idiazabal Gazta Egitea

The making of Idiazábal — the smoked or unsmoked pressed sheep's milk cheese of the Basque Country and Navarre, made exclusively from the milk of Latxa and Carranzana ewes (Basque sheep breeds). Idiazábal is the most celebrated Basque artisan food product — its DOP requires raw milk, traditional rennet, and hand-pressing in wood or plastic molds. The cheese maker reads the curd development by a combination of temperature, time, and tactile curd firmness assessment — the cut curd must reach the correct firmness before pressing, and the pressed wheel must sound correctly when tapped.
