Bayerisches Weissbier — Hefeführung
A complement to the Munich lager brewing record (CRAFT-1191), documenting the distinctly different yeast management tradition of Bavarian Weissbier (wheat beer) — the top-fermenting beer style specifically protected in Bavaria until 1798 as a royal monopoly of the Wittelsbach dynasty. Weissbier uses a top-fermenting yeast (Obergärung) that produces the characteristic clove and banana esters from guaiacol and isoamyl acetate — a flavor profile that is entirely dependent on fermentation temperature management, since small temperature variations produce dramatic ester shifts. The Weißbier Braumeister reads the fermentation aroma daily to manage the clove-banana ester balance.
