Basque Txakoli Winemaking

Txakoli Elaborazioa

The making of txakoli — the Basque low-alcohol; high-acid; slightly sparkling white wine made from Hondarrabi Zuri (white) and Hondarrabi Beltza (red) grapes grown on steep coastal terraces. Txakoli is the most terroir-specific wine in the Spain archive — its character is inseparable from the Atlantic climate of the Basque coast (high humidity; moderate temperatures; constant sea breeze) that produces grapes of extreme acidity and low sugar. The txakoli maker pours the wine from height (the same venencia-style overhead pour used in Jerez — CRAFT-1030) to aerate and release the natural CO2.
