Élaboration du Pineau des Charentes
The making of Pineau des Charentes — a mistelle (grape juice mutage) produced by blending fresh unfermented Ugni Blanc grape juice with Cognac eau-de-vie in the proportions 3:1, then aging the blend in Limousin oak barrels for minimum 18 months. The technique requires the marriage of two fundamentally different substances — fresh grape juice and a spirit — in a ratio that must be judged by nose and taste at the moment of blending. The Pineau tradition is unique in French viticulture as a deliberate non-fermentation.
